Meringue Pops!

Pretty simple idea but ended up being quite fiddly…but how cute? These were for a breast cancer awareness day in work so I mixed up some pink ones aswell!

Simple meringue recipe…just pipe into circles. I put my sticks in before cooking and they stayed perfectly. I did rose and vanilla meringues and added some pink colouring. You could really change up the flavours!

Made this birthday cake for a buddy! Cookies and cream and regular kitkats
On the outside with chocolate and peanut butter cake topped with chocolate frosting and peanut m&ms….I think thats enough chocolate!

Another LOTR style bake – lembas!

This Lord of the Rings  style bake started as a bit of a joke, but everyone loved them!

For those who don’t know much about LOTR (if those people exist at all) lembas was a bread made by the elves and it helped keep Frodo going on his journey.

Unfortunately, I dont have the special elf corn to make the real stuff – this is just some really scrummy chocolate chip shortbread!

Ingredients:

100 g of chocolate chips (optional)

125 g of butter

55 g of caster sugar

180 g of plain flour

Method:

Step One: Preheat the oven to 190 degrees or gas mark 5

Step Two: Beat the butter and sugar together until smooth

Step Three: Sift and stir in the flour, then add the chocolate chips if using. It should be smooth but firm enough to roll out onto a work surface. It should be about 1 cm thick

Step Four: Cut into shapes – I went for squares as it was easier to wrap them in the leaves. Circles and fingers work just as well

Step Five: Cool in the fridge for half an hour. This helps them to hold their shape

Step Six: Bake! About 15 – 20 minutes, they should be a nice golden colour. Then cool on a wire rack

Done! I made the leaves from green paper and cut out leave shapes and drew on a few details. An added touch would be to tie them up with string. Enjoy! 🙂

Chocolate chip baked cheesecake!

This is most definitely a new fave!

Ingredients:

120 g of biscuits, digestives work the best

75 g of butter

675 g of cream cheese

1 397 g tin of condensed sweetened milk

3 eggs

200 g of chocolate chips

2 teaspoons of vanilla essence

1 teaspoon of plain flour

Method:

Step One: Preheat oven to 150 degrees or gas mark 2. Crush the digestive biscuits and mix with melted butter. Press to the bottom of a spring form tin. Put in the fridge to set.

Step Two: Beat the cream cheese until it is soft and smooth to use. Slowly add the condensed milk until combined. Then add the eggs and vanilla essence.

Step Three: Coat the chocolate chips with flour, this helps them be evenly distributed so they don’t all sink to the bottom! Mix 2/3 into the mixture and add mixture on top of the biscuit base. Sprinkle the rest of the chocolate chips on top.

Step Four: Bake in the oven for one hour. When finished turn oven off and open door slightly. Leave to cool like this for one to two hours before moving to the fridge. This stops cracks from appearing.

Up cupcakes!

It was my two year anniversary with my partner on the weekend and cupcakes seemed the obvious choice. We recently fell in love with disneys Up (the cutest love story ever!) so I wanted to incorporate that. Vanilla cupcakes with vanilla buttercream.

I dont think the house was that good but I had limited time and i’m not that great drawing!

Next time I think I would spend more time on the background drawings and do mini cupcakes!

Sugar Cookies, Tolkien Style

Yep, I think these are amazing.

I love good old Tolkien. I’m sure i saw this on Pinterest once and thought they could be easily made with the family sugar cookie recipe! They went down very well, although I was told by my partner that he imagined the door a darker shade of green…no complaints on the taste however!

If you are not that much of a fan of the books/films, this is still a pretty yummy sugar cookie recipe and you can use any cookie cutter and decorate however you want!

Ingredients:

  • 100g unsalted butter, softened
  • 100g caster sugar
  • 1 egg, beaten
  • 275g plain flour
  • 1 tsp vanilla extract

Step by step:

Step One: Preheat the oven to the 190 degrees. Line a baking tray with grease proof paper

Step Two: Cream the butter and sugar together. It should be light and fluffy!

Step Three: Beat in the vanilla and egg, little by little until all combined

Step Four: Stir in flour until its looking like a dough

Step Five: Roll the dough out onto a slightly floured surface. It should be about 1 cm thick. Using any biscuit cutters you fancy cut out your shapes! 

Step Six: Bake for about 8 – 10 minutes. Let them harden a little before you finally cool them on a wire rack

Step Seven: Decorate however you fancy!

 

 

 

 

 

 

Lemon and Mint Turkey Meatballs

Lemon & Mint Turkey Meatballs. Yum.

These are so fresh, so tasty and so good for you!

I love fresh mint, but before this recipe I couldn’t imagine having it on anything other than a good bit of lamb. This does actually work really well with the lemon and turkey and it’s my new ultimate meatball recipe!

Ingredients:

  • 500g fresh lean turkey mince
  • 1 small red onion, very finely chopped
  • grated rind and juice of 1 lemon
  • 3 tbsp finely chopped fresh mint 
  • pinch of salt and pepper
  • 1 egg, beaten

Steps:

Step One: Mix all the ingredients together in a bowl, making sure the mint and lemon are spread evenly throughout the turkey mince.

Step Two: Divide into small meatballs. I made about 20 with this amount of meat, but it’s up to you how big you like them! Cover and chill for a couple of hours because they are more likely to hold their shape.

Step Three: Cook! Cook in a frying pan with a little bit of oil (I use my trusted 1 cal spray!) and make sure you turn every couple of minutes. Cooked till piping hot and not pink in the middle.

These are so nice! You could quite easily turn these into some nice burgers as well! 

Coconut crusted chicken!

This is my new fave! Served it with pineapple salsa (it’s on a previous post) and sweet potato chips!

3 simple steps to these amazing chicken strips. First dip in a mix of flour and chilli powder…then in egg…then in desiccated coconut! Cook for 25 minutes at 200 degrees.

It works so well with the salsa and the leftovers can be stored in the fridge and put in a tortilla for an easy lunch the next day.
I have to say the chilli powder in the flour really made the difference and gave it the extra something!
