Red Velvet Cake

I absolutely love red velvet cake.

I bought a cake mix from an american grocery website a couple of years back, I love the bright red, the cream cheese frosting, everything!

I gave it a go Christmas last year from scratch for the first time and the recipe has definitely been put in the book!


The following can make 8 big cupcakes, or double it and you’ve got the cake:

  • 150g plain flour
  • 1 tsp bicarbonate of soda
  • 5 tbsp sugar/splenda
  • 1 large egg
  • 125ml buttermilk or low fat yoghurt
  • 75ml neutral oil like groundnut or mild olive oil
  • 1 tsp vanilla extract
  • 2 tbsp cocoa
  • 2 tbsp red food colouring
  • 1½ tsp vinegar

Step One: Preheat the oven to 180 degrees, gas mark 4.

Step Two: Mix the flour, bicarb and sugar/splenda together.

Step Three: Mix together the egg, buttermilk, oil and vanilla til smooth, them mix with the flour mixer. You should have a lump free cake batter.

Step four: Mix together the cocoa and food colouring to make a paste, then add to the cake batter, You should have a deep red, very christmassy colour!

Step 5: Lastly add the vinegar and then spoon into the cake cases. Bake for 15 mins/til spring and allow to cool before frosting!

For the cream cheese frosting:

I normally double is amount, mainly because i lick the bowl/use a hell of a lot!

75g butter, softened

200g cream cheese

410g icing sugar sifted

Make sure when using the cream cheese that you get rid of the horrible watery stuff that’s on the top….I always use philli because the cheap stuff never seems to do it justice.

The butter should be warm, it makes it easier to mix together properly!

* Decorate however you wish, but i love red/gold sprinkles or sugar!
