I love Mexican food – especially making all types of salsa.
This has to be be my favorite sides ever. It’s fresh, it’s super tasty & I use it on everything. I’ve had it on nachos, with prawns, on pork chops and with just salad!
- cup of pineapple chunks
- one red pepper, diced
- half a green chili, thinly chopped
- zest and juice of half a lime
No step-by-step needed. Chop, mix & voila.
Be warned, you will end up making this constantly. I buy pineapple chunks in its juice in tins so i know I can pretty much always throw this together.
Also, you can put as much or as little of the chili pepper as you want – i just love it with a little kick.
